Beef Strips with Soy Sauce and Garlic

1 pound or more of chuck roast
Using a boning knife cut around the bones to remove. Using a very sharp santuko or chef knife, cut the beef into thin strips across the grain. Using a sharp paring knife, slice the stem ginger into 2-3 pieces. Marinate the strips in soy sauce, seasonings. To cook, heat oil in heavy bottomed skillet. Cook and stir the beef several minutes or until done, adding the dried garlic towards the end. Garnish and serve.
