Pasta with Roasted Walnut Sauce

From Dorothy McNett's recipes at "un altra goccia di salsa" For a gluten free pasta, use any of the wonderful quinoa pastas. This is great served with stir-fried beef, etc.

1 pound tagliatelle, fettucine or other ribbon pasta

1 1/2 - 2 cups walnuts
1/2 teaspoon cinnamon
pinch nutmeg
sea salt
freshly ground peppercorns
1/4 cup extra-virgin olive oil
1/4 cup heavy cream
1/4 cup Moscato or white grape juice

Cook the pasta in pasta cooker, water seasoned with sea salt and a splash of oil. Cook according to package directions. In meantime, place walnuts in batter bowl and microwave 2-3 minutes, stirring after 2 minutes, to toast them slightly. In food processor with steel chopping blade in place, chop the walnuts to coarse meal. Add remaining ingredients and process only until the paste is emulsified. Toss it into the cooked pasta. Serve! Sauce is wonderful also with slices of bread or crackers as a spread.
