Beans and Rice Casserole

From dorothy McNett's Recipe book at www.dorothymcnett.com. It sounds too simple...but is so widely received. It is perfect for a buffet party as can be done ahead and is generally very crowd pleasing. Goes great with Zinfandel.

2 cups freshly cooked beans such as or pinto or others
2 cups cooked white or brown rice
1 teaspoon fine sea salt
2 cups Mascarpone cheese
3-4 green onions or 1-2 leeks, slivered
1/4 cup best quality catsup or barbecue sauce
1/4 cup milk

Preheat oven to 375-400 degrees. Oil or butter a 2 quart casserole or a 9 by 13 baking dish. Combine all ingredients and pour into dish. Bake about 20 minutes.
