Chinese Salad with Crispy Won Tons

From Dorothy McNett's recipes at www.dorothymcnett.com.

8 won ton wrappers
corn or peanut oil for frying

1 1/2 cups cauliflower, cut into florets
1 1/2 cups broccoli, cut into bite-sized pieces
1/4 cup chopped fresh coriander
2 tablespoons finely sliced scallions
1/2 cup thinly sliced water chestnuts
1/4 cup toasted sesame seeds
1 small head romaine lettuce, torn into bite-sized pieces
2 teaspoons toasted sesame oil
3 tablespoons rice wine vinegar
1/4 teaspoon sea salt
1/4 teaspoon sugar
1 tablespoon soy sauce

Cut won ton wrappers in 1/4 inch strips. Heat oil to about 1/2 inch depth in wok or saute pan and fry the strips just until golden. Remove to a paper towel lined baking sheet and set aside. In glass or ceramic batter bowl place the cauliflower and broccoli and cover with a glass plate or other lid. Cook in microwave 3 minutes. Remove lid and allow to cool. Combine vegetables, coriander, scallions, water chestnuts, sesame seeds, and romaine in a salad bowl. Mix sesame oil, vinegar, salt, sugar, and soy sauce together and pour over salad. Toss and garnish with the crispy won tons.
