Potato Sunflowers or Nests

From Dorothy McNett's recipes at www.dorothymcnett.com. One medium potato will make 4-5 nests or flowers. This is a decorative touch for hashed brown potatoes!

2-3 medium potatoes (even great with yams or sweet potatoes)
2-4 tablespoons oil (grapeseed oil is great, or garlic infused sunflower oil)
fine sea salt
freshly ground pepper
carrot coins and mustard sauce for garnish
(to make a mustard sauce, blend a little olive oil with Dijon mustard, or mayo and mustard)

Peel (or not!) and then coarsely shred potatoes, using a grater, mandolin or food processor. In a heavy bottomed skillet heat enough oil to coat the bottom of the pan to be about 1/8 inch, until it is hot and hazy, but not smoking. Drop rounded tablespoons of potatoes in the oil and spread a little, keeping the cakes thin so they look flower-like. Saute until golden brown on both sides, about 5 minutes total. Place on paper towels, sprinkle with salt and pepper and serve. Dollop a bit of a good mustard or mustard sauce into the center of each to serve, tucking in a thinly sliced bit of carrot if desired to make a flower like presentation.
