Turkey Mole

From Dorothy McNett's recipes at www.dorothymcnett.com. Use chicken instead of turkey, don't forget to change the name!

1 turkey breast, or leg and drumstick portion
olive oil
freshly ground pepper
sea salt

2 cups good quality turkey or chicken broth
1 1/2 cups diced ripe tomatoes (fresh or good quality canned)
2-3 tablespoons chili powder
1/4 - 1/2 teaspoon cayenne
1/3 cup creamy peanut butter
1/3 cup semi sweet chocolate chunks
1 tablespoon sugar or honey
1/2 teaspoon ground cinnamon

flour tortillas
cooked rice, or mashed potatoes

Brush turkey with oil, and sprinkle liberally with paprika, pepper, salt and oregano. Preheat oven to 375 and roast turkey, using 18 minutes per pound of turkey as a guide. Allow to stand until cool enough to handle. In meantime combine broth, tomatoes, chili powder, spices, peanut butter, chocolate, honey and cinnamon in a heavy bottomed saucepan. Slowly bring to boil, stirring often. Cut or tear the turkey meat into shreads. Add to broth mixture, stir well. Simmer gently, uncovered, 20-30 minutes to blend flavors. Serve warm with flour tortillas and rice, or mashed potatoes.
