Potatoes and Broccoli
From Dorothy McNett's recipes at www.dorothymcnett.com. Try using coconut oil (which is actually a solid, and will melt as it heats) for a unique flavor combo.
3-4 small Yukon gold potatoes
Thinly slice the potatoes and the broccoli and place in a glass or ceramic batter bowl or other casserole. Add butter or oil, salt and pepper. Cover with a glass or ceramic lid, or use parchment paper or even a few leaves of romaine or other greens. Cook in microwave 5 minutes, or just until barely tender. Sprinkle with lemon juice and honey.
