Pan Sauteed Halibut Steak

From Dorothy McNett's Recipe Book at

1-2 thick halibut steaks
1 tablespoon flour or fine cornmeal
Herbes de Provence
salt and pepper
1-2 teaspoons each butter and olive oil
white wine or lemon juice to deglaze the pan

Rub the flour or cornmeal over the fish and then press in the herbs and seasonings. Heat saute pan with butter and oil to just coat the bottom of the pan. When pan is hot, but not smoking hot, add the fish. Cook 3 minutes on the first side, and then 2-3 minutes on the second side or until fish is done. Remove fish and quickly add the wine or juiice to the pan, stirring with a silicone spatula to make a glaze. Pour over the fish and serve.
