Beef Ribs with Spicy Rub

2-3 cloves garlic
1 teaspoon coarse sea salt (not too chunky)
1/4 - 1/2 teaspoon freshly ground peppercorns
sprinkles of cayenne, if desired
1 teaspoon Italian dried herbs, or Herbes de Provence, or any mixture you choose
1/4 - 1/2 teaspoon dry mustard
1/2 teaspoon raw sugar
1-2 pounds beef ribs, or more as needed
2-3 tablespoons good quality barbecue sauce

On a plate combine the minced garlic, salt, pepper, dried herbs, mustard and sugar. Work it into the ribs and then allow to stand at room temperature 30 minutes, or overnight in the refrigerator. To oven roast, preheat oven to 375 degrees. Arrange ribs on a roasting or broiling rack. Bake about 30 minutes. Turn the ribs over and brush with a small amount of barbecue sauce. Return to oven for about 15 minutes.
OR, prepare your outdoor grill with medium to hot fire or coals. Cook, covered, for about 10 minutes for the first side. Turn them over, brush gently with the barbecue sauce, and cook about 6-8 minutes more or until done. Be careful not to burn them, or the sauce!
OR, for 1-2 people you can use your indoor stove top grill pan, cooking gently for about 10 minutes. Turn, brush with sauce and then cook another 3-4 minutes or until done. It goes faster but it easier to get them too brown too fast. Just watch carefully, regulating the heat as they cook.
