Marinated and Grilled Turkey Parts

several legs and thighs, or 1/2 turkey breast cut into evenly shaped pieces
2 teaspoons fine sea salt
1/2 teaspoon freshly ground peppercorns
3-4 cloves garlic, minced
1/2 cup olive or grapeseed oil
1/2 cup white wine vinegar or rice vinegar
2 medium tomatoes, chopped
1 green pepper, chopped
2-3 sprigs parsley, chopped
1/2 cup sliced interesting stuffed olives

Place turkey parts in a 9 by 13 inch baking dish or similar pan. Combine remaining ingredients except for the paprika and pour over the turkey, making sure all pieces are coated. Place in refrigerator several hours or overnight. When ready to cook, remove pieces from marinade. Sprinkle with paprika or Zip. Reserve marinade. To grill: choose outdoor grill, habachi, or use indoor stove top grill pan. White meat will cook a little faster. Allow about 10 minutes per side of meat over medium coals or medium heat. In meantime, pour marinade into saucepan and bring to a boil and gently cook several minutes. Serve as a salsa with the turkey parts. To speed cooking time, cut turkey pieces smaller and thinner. Do not overcook as it will get too dry.
