Green Beans with Special Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Special Sauce means it is made with either oil packed anchovies, or water packed sardines. Either version makes a new and delightful sauce for local fresh green beans!

1 cup fresh parsley
1 cup fresh baby spinach
3 oil packed anchovy fillets, drained OR 2 - 3 water packed sardines
1/2 cup Parmagiano-Reggiano, freshly grated
2 teaspoons Dijon mustard
1/2 cup extra virgin olive oil

1 pound fresh green beans
2-3 tablespoons water
pinches of sea salt

In food processor with steel chopping blade in place whirl the parsley and spinach to puree it and then add the anchovies or sardines, cheese, and mustard. With motor running drizzle in the olive oil to make a dressing. Set aside. Wash and cut off the stem end of the beans, leaving on the dark green tail. Heat water in a large frying pan that has a lid. When water is hot, add beans. Quickly place on the lid. Cook 3 minutes without peeking. Then remove lid, sprinkle with salt and arrange on a serving platter and serve with the dressing, some poured over the beans and some in a bowl for serving on the side.
