Chocolate Chews

From Dorothy McNett's recipes at This recipe is from Toby, the wonderful cook at the Circle Bar Guest Ranch in Utica, Montana, where I worked one summer during college days.

2 eggs, slightly beaten
1 cup sugar (crystalline brown sugar...Sugar in The Raw)
1/2 teaspoon vanilla
2 1/2 tablespoons butter
2 squares chocolate (2 oz. Baker's Unsweetened Baking Chocolate)
1/2 cup plus 1 tablespoon flour (unbleached all-purpose)
1/2 to 1 cup chopped nuts

Melt butter and chocolate. Mix well eggs, sugar, and vanilla. Cool chocolate and butter a bit. Add to egg mixture. Add flour. Put in pan (11 by 7 by 1 1/2 inch ) and top with chopped nuts. Bake 350 degrees 15 to 20 minutes. Cool in pan, and then cut.
