Potato Chunks, or Mashed

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve just a few chunks of cooked potatoes or sweet potatoes or yams along with other vegetables on a cheese platter for a nice appetizer, etc. These can be mashed, adding a little butter or milk as you whip them with a beater or potato masher for making soups and main dishes.

1 - 3 medium potatoes, with skins on, or 6-8 small ones
salt and pepper
fresh greens
assorted cheese chunks

Wash and trim potatoes, peeling them if desired. Cut into chunks about the same size. If using small potatoes, leave them whole. Place in glass or ceramic batter bowl. Cover with a glass or ceramic plate, never plastic! Cook in microwave using 3 minutes per large potato as a guide. Sprinkle with salt and pepper and serve on a beautiful platter with greens and assorted cheese chunks for an appetizer or salad. If desired, mash them, adding 1-2 tablespoons butter or olive oil. If you want them to be really fluffy, use your electric beater. Using a potato masher is nice as it leaves a bit more texture in the potatoes. You choose!
