Watermelon Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Especially beautiful served in a long watermelon boat or basket which you carve using garnishing tools and a small flexible paring knife. Red, white, and blue for the 4th of July! Chill and take to a picnic!

watermelon balls
fresh berries of all sorts
dried blueberries
shaved unsweetened coconut
crumbled feta cheese

2-3 tablespoons extra virgin olive oil
1-2 teaspoons honey
1-2 teaspoons good quality aged balsamic vinegar
sea salt
pinch of dried red pepper flakes
any collected fruit juices
snipped fresh mint leaves

In a large bowl combine all fruit balls, fruit chunks, coconut and feta. In a measuring cup, whisk together the dressing ingredients, using any accumulated fruit juices. Toss into the salad and then pile it into the watermelon basket. Garnish with mint leaves and serve.
