Carrot Chunks Wrapped in Lettuce
From Dorothy McNett's recipes at www.dorothymcnett.com. Use a good quality home-made or purchased meat or vegetarian pate or hummus. This is a colorful and appealing appetizer to serve with Chardonnay.
2-3 fresh carrots
Scrub the carrots. Cut into small finger food sized chunks. Place in bowl, cover with waxed paper and microwave on high 3-4 minutes. Cool. Spread lettuce with the pate, add a carrot chunk and wrap or fold to make a bundle easily picked up and eaten with your fingers.
