Carrot Chunks Wrapped in Lettuce

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Great with Zinfandel as a grazing food.

2-3 fresh carrots
Pate of choice, even vegetarian pate
fresh romaine or other lettuce leaves

Scrub and lightly peel the carrots. Cut into small finger food sized chunks. Place in bowl, cover with waxed paper and microwave on high 3-4 minutes. Cool. Spread lettuce with the pate, add a carrot chunk and wrap or fold to make a bundle easily picked up and eaten with your fingers.
