Carrot Chunks Wrapped in Lettuce

From Dorothy McNett's recipes at Use a good quality home-made or purchased meat or vegetarian pate or hummus. This is a colorful and appealing appetizer to serve with Chardonnay.

2-3 fresh carrots
good quality pate or other spread of choice
fresh romaine or other lettuce leaves

Scrub the carrots. Cut into small finger food sized chunks. Place in bowl, cover with waxed paper and microwave on high 3-4 minutes. Cool. Spread lettuce with the pate, add a carrot chunk and wrap or fold to make a bundle easily picked up and eaten with your fingers.
