1-2 Yukon Gold potatoes
Scrub the potatoes but do not peel. Place in glass or ceramic batter bowl. Cover. Cook in microwave, using 3 minutes per potato as as guide. Cook until tender. Cool slightly. Slice the cheese about 1/4 inch thick. Heat a heavy bottomed frypan or saute pan. Place the slices of cheese in the hot pan to brown, turning them to brown both sides. Remove to a plate. Cut the cooked potatoes into long finger shaped slices. Place on top of the grilled cheese. Garnish with chives and drizzle with oil. Make small ones for grazing foods, larger ones for a dinner side dish.
