Caramelized Onion Salad
From Dorothy McNett's recipes at www.dorothymcnett.com. Double or triple this and serve as a vegetable dish, or tossed into green salads.
1-2 onions, sliced thinly
Heat heavy bottomed saute pan over medium heat, add olive oil and onion slices. Cook and stir slowly at medium low for 20-25 minutes, or until onions are browned and soft. Cool. Blend in some cheese, if desired, and serve dolloped on crackers, or into a big bowl of fresh greens. This is also great as a potato topping.
