Caramelized Onion Salad

From Dorothy McNett's recipes at Double or triple this and serve as a vegetable dish, or tossed into green salads.

1-2 onions, sliced thinly
1-2 tablespoons olive oil
1-2 tablespoons Gorgonzola or other blue cheese, as desired
lots of fresh lettuce and other greens
thin crackers or bread slices

Heat heavy bottomed saute pan over medium heat, add olive oil and onion slices. Cook and stir slowly at medium low for 20-25 minutes, or until onions are browned and soft. Cool. Blend in some cheese, if desired, and serve dolloped on crackers, or into a big bowl of fresh greens. This is also great as a potato topping.
