Melon Balls Spiced

cantalope or other summer sweet melon
baby spinach leaves
olive oil
best quality Balsamic vinegar (aged at least 10 years)
sea salt
dried red pepper flakes or Zip

Make melon balls or simply cut melon into finger food sized chunks. Scatter baby spinach leaves over a serving platter and put the melon balls on the top. Drizzle with olive oil, and sprinkle on a little balsamic. Pinch on some pepper. Great served with Italian or Spanish red table wines or Zinfandel, as well as a chilled Sav Blanc.
