Red Cabbage Wedges

From Dorothy McNett's recipes at www.dorothymcnett.com. Tired of over-cooked cabbage? Use this method for premium tasting and colorful nutritious cabbage wedges. Or, arrange on a baking sheet and roast them. Either way, so delicious.

1 small head red cabbage
sliced apples, if desired
1-2 tablespoons olive oil or butter
2-3 snipped green onions
1 teaspoon fennel or caraway seeds
sprinkles of sea salt
freshly ground pepper, as desired

Wash and trim the cabbage, cutting into wedges and leaving the core intact. Arrange in a round glass or ceramic baking dish. If using apples, arrange between amd under the cabbage wedges. Sprinkle with remaining ingredients. Cover with a glass or ceramic lid, or waxed paper. Cook in microwave for 5-6 minutes, may take up to 10 minutes, or until the cabbage is crispy tender.
Or, arrange the wedges and slices on a silicone or parchment lined baking sheet with sides. Sprinkle with seasonings and onions. Roast in 350 degree oven for about 40-45 minutes.
