Black Beans with Sage and Garlic

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Cook beans in a pressure cooker when time allows (about 40 minutes total) or open a can of beans.

1 tablespoon garlic infused oil
2-3 cloves garlic, minced
1 fresh green pepper, finely diced
1 bay leaf
2 cups cooked black beans
1 teaspoon dried sage
1/2 teaspoon fine sea salt
several dashes of Tabasco

In large skillet or saute pan, heat oil and then add garlic, peppers and bay leaf. Saute until peppers have just begun to soften, about 4 minutes. Add beans, sage, and hot sauce. Simmer gently to develop flavors. Remove bay leaf. This is great served with whole wheat buns, or warm flour tortillas.
