Grilled Cheese Appetizers

From Dorothy McNett's recipes at Grill these sandwiches and then cut into small pieces and arrange on an appetizer plate. Great for a Super Bowl party! Pairs great with beer or wine!

1/3 cup unsalted butter
1 tablespoon very finely minced onion
slices of good quality Cheddar, or Swiss, Emmenthal, Gruyere, etc. cheese
6 whole wheat or other bread slices, as desired
sweet or smoked paprika

In a small bowl blend the softened butter with the very finely minced onion. Set aside. Place 3 of the bread slices on a flat surface and arrange the sliced cheese, making sure you get cheese all the way to the edges! Sprinkle cheese with paprika. Place another slice of bread on top. Gently spread the soft butter/onion mixture on both sides of each sandwich. Heat a flat pancake griddle, or a large saute pan. Grill for 1 minute or so, until nicely browned but not burned. Using a flat pancake style spatula, turn each sandwich over and grill on the second side until nicely browned and the cheese is melting a bit. Remove to a cutting board and let stand a couple of minutes. Using a serrated edge bread knife, slice into small pieces, arrange and serve!
