Pepper Steak

From Dorothy McNett's recipes at

1 green bell pepper
1 red or yellow bell pepper
2 - 3 fresh apricots
1/2 teaspoon paprika, smoked preferred
1/2 teaspoon cayenne, or as desired
1/4 cup white wine vinegar
2 tablespoons sherry or water
2 tablespoons crystalline brown sugar
1/4 teaspoon fine sea salt

fillet steaks
sea salt
freshly ground pepper, as desired
dry herbs, to rub into the steaks

1 teaspoon unsalted butter
1 teaspoon extra virgin olive oil
1-2 shallots, slivered
2 tablespoon red wine or brandy
1 tablespoon butter

Finely chop peppers and apricots and place in batter bowl. Add paprika, cayenne, vinegar, sherry or water, sugar and salt. Cook 3-4 minutes in microwave. Set aside. Rub each steak with sea salt, freshly ground pepper and herbs as desired. Set aside. Heat butter and oil in heavy bottomed saute pan or skillet until hot but not smoking hot!. Sliver the shallots, add and sauté 1 minute. Add the seasoned steaks. Quickly cook on one side for 2-4 minutes, turn over, and sauté until done to your liking. Remove meat to a platter. Turn up the heat with the drippings, add the wine and butter. Cook and stir until reduced slightly. Taste, adjust seasonings and pour over steak. Serve with the pepper and apricot mixture as a side sauce. Slice with a sharp knife, if desired, to make slivers of steak for an appetizer course.
