Add paprika, cayenne, vinegar, sherry or water, sugar and salt. Cook 3-4 minutes in microwave. Set aside. Rub each steak with sea salt, freshly ground pepper and herbs as desired. Set aside. Heat butter and oil in heavy bottomed saute pan or skillet until hot but not smoking hot!. Sliver the shallots, add and sauté 1 minute. Add the seasoned steaks. Quickly cook on one side for 2-4 minutes, turn over, and sauté until done to your liking. Remove meat to a platter. Turn up the heat with the drippings, add the wine and butter. Cook and stir until reduced slightly. Taste, adjust seasonings and pour over steak. Serve with the pepper and apricot mixture as a side sauce.
