Summer Cool Salad

From Dorothy McNett's recipes at Excellent vitamin C and good source of calcium and vitamin A. This is cool and refreshing to serve with ribs, sausages, smoked foods, etc.

1 medium cucumber
1 teaspoon fine sea salt
2 medium tomatoes, diced
1-2 tablespoons finely diced onion
1 cup good quality yogurt
1/4 cup chopped fesh parsley
1-2 tablespoons chopped fresh cilantro

Peel the cucumber and remove the seeds, if desired. Slice thinly and sprinkle with salt. Allow to stand about 30 minutes and then squeeze to remove excess liquid. Combine cucumber with remaining ingredients. Chill.
