3 large carrots
Scrub and scrape the carrots. Cut into even chunks. Place in batter bowl, cover with waxed paper or a plate. Microwave on high 4 minutes, or until tender. Allow to cool and then mash them. Measure to have about 3/4 cup or so. Preheat oven to 350 degrees. In batter bowl, melt butter 30 seconds on high. Add remaining ingredients, blending well. Pour into a buttered 9 by 13 inch pan. Bake 25-30 minutes. Cool. Cut into bars and sprinkle with powdered sugar.
