Honey Bunches

From Dorothy McNett's recipes at www.dorothymcnett.com. A perfect sweet to serve as a finger food after a wine and cheese tasting event! Nice and sweet, easy to make, and everyone loves them.

3 cups oatmeal (Irish oatmeal, rolled oats, etc.)
1/2 teaspoon sea salt
2 cups unsweetened shaved or flaked coconut
1 cup all purpose unbleached flour
1 1/2 cups raw sugar
1 cup unsalted butter
1/3 cup honey

Preheat oven to 350 degrees. In large mixing bowl combine oatmeal, salt, coconut and flour. In heavy bottomed saucepan combine sugar, butter and honey. Bring to a boil. Pour over dry ingredients and mix well. Drop by teaspoons onto silicone or parchment lined baking pans. Bake 12-15 minutes until well browned. Cool.
