Tomato and Avocado Tidbits

From Dorothy McNett's recipes at

slices of good quality brown bread or hearty European style French bread
fresh ripe tomatoes, such as Heirloom in various colors
sliced avocado
sea salt
extra virgin olive oil for drizzling

Spread each slice of bread with the mayo, all the way to the edges. Slice tomatoes and arrange on top, adding avocado. Sprinkle with sea salt. Cover with a second slice of bread to make a sandwich. With a sharp knife, cut each sandwich into bite sized pieces and arrange on a plate. I drizzle a little olive oil over the top so that they stay nice and fresh while you wait to serve them. Just a little!
