Slice tomatoes and arrange on top, adding avocado. Sprinkle with sea salt. Cover with a second slice of bread to make a sandwich. With a sharp knife, cut each sandwich into bite sized pieces and arrange on a plate. I drizzle a little olive oil over the top so that they stay nice and fresh while you wait to serve them.
