Wine Soaked Cheese Chunks

From Dorothy McNett's recipes at www.dorothymcnett.com. Make ahead and serve before and during any meal!

bite sized pieces of cheddar or other firm cheese (provolone is great)
1 cup red wine
snipped fresh herbs, such as lavender or rosemary blossoms

Cut the cheese into little squares. Place in a bowl and pour in the red wine, just to cover the cheese. Allow to marinate about 2-3 hours, or even overnight. Remove from the wine, garnish with snipped herbs and use toothpicks for serving. The red wine marinade can be used for a great finishing sauce for pan-grilled steak.
