Zucchini Strips

From Dorothy McNett's recipes at www.dorothymcnett.com. A fine appetizer, can be made several hours ahead. By cooking the squash in the vegetable cooker, they retain their natural flavors and stay crispy enough to be a delicious finger food.

1-2 zucchini or yellow squash
olive oil
thin slices Serrano ham or Prosciutto

Cut squash into strips about 1/2 inch square and 2-3 inches long. Arrange spoke fashion on a microwave safe plate or dish. Sprinkle with olive oil. Cover and microwave on high only 1-2 minutes, just to begin cooking them. Do not overcook. Allow to cool enough to handle, wrap each with a strip of the Serrano or Prosciutto. Serve as it, or to be dipped into various olive oils or dips.
