Use best quality grass fed beef, a wonderful full bodied extra virgin olive oil, and a great blue cheese that can be crumbled (not too creamy). Can be made ahead and served chilled, or serve fresh from the pan. London Broil or other good quality "grilling" steak Slice the beef across the grain into slices about 1/4 inch thick. Sprinkle with olive oil, garlic, salt and pepper. Heat a saute pan or a stove-top grill pan. Sear the strips on both sides to your liking. Arrange on a platter and sprinkle with crumbled blue cheese.
