Brush with the mustard as good as you can, the fish is so thin be careful. The little bit of mustard makes the surface tacky so that the four mixture sticks better, and it adds a nice flavor to the fish. Combine flour, salt, pepper and herbs. Coat each piece with the flour mixture. Using a heavy bottomed saute pan, heat the oil to 375 degrees on a deep-fry thermometer. Fry the fish in batches so that the pieces so not touch.
