Fried Sand Dabs

2-3 sand dabs per person
1-2 teaspoons mild prepared mustard
1/2 cup unbleached all purpose organic flour
1 teaspoon fine sea salt
1/2 teaspoon freshly ground pepper
1 teaspoon Fish Herbs, All-Purpose Blend, or freshly snipped herbs (oregano)

vegetable oil (olive oil is wonderful) to cover bottom of saute pan by 2 inches
lemon slices
snipped fresh parsley

Pat the sand dabs with paper towels. Brush with the mustard as good as you can, the fish is so thin be careful. The little bit of mustard makes the surface tacky so that the four mixture sticks better, and it adds a nice flavor to the fish. Combine flour, salt, pepper and herbs. Coat each piece with the flour mixture. Using a heavy bottomed saute pan, heat the oil to 375 degrees on a deep-fry thermometer. Fry the fish in batches so that the pieces so not touch. It will take only 1 minute, perhaps a little more. Do not overcook! Serve with lemon juice and snipped fresh parsley.
