See Also: Cookies Pineapple BarsFrom Sue Qualset 1/2 cup sugar Combine sugar, flour, coconut, and butter and mix like pie crust and put 2/3 in bottom of a large pan and pat down. In a saucepan, cook the pineapple, sugar, cornstarch and egg yolks until thickened. Put on top of crust, sprinkle the rest of the crust mix over and bake until light brown.
