Apples with Sausage and Onions

From Dorothy McNett's recipes at Make this and serve as an appetizer with assorted cheeses and thin bread slices, etc...

1-2 apples (any variety works!)
1-2 Smoked Chicken Apple Sausages, or any other as desired
1 medium onion
1 - 2 teaspoons olive oil

chutney or relish, as desired (apple sauce touched with a bit of horseradish!)
bread slices or small sandwich buns...

Core and slice or dice the apples. Slice or dice the sausages and onion. Heat the oil in a saute pan. Add apples and onions. Cook and stir 6-10 minutes (to soften apples and onions, but not to brown them) and then add the sausages. Cook and stir several minutes. If using a sauce, add it now. Serve with cooked rice, pasta, mashed potatoes, or even tucked into a sandwich bun.
