beef skirt steak or eye of the round
2 tablespoons olive oil
juice of 1 lime
1-3 tablespoons chili powder, or other Mexican seasoning as desired
1/2 teaspoon fine sea salt

3-4 green onions, sliced
1/2 cup fresh cilantro, chopped
1/2 head butter lettuce, chopped
feta cheese, or white cheddar
corn tortillas

If using skirt steak, leave it as it is. If using the eye of the round, butterfly the meat so that you have a flatter piece. In batter bowl combine oil, lime juice and seasonings. Roll the meat in the marinade and then allow to marinate at least 30 minutes. Heat grill pan. Cook beef until cooked throughout, turning once. Combine onions, cilantro and lettuce. Dice the cheese. Warm the tortillas by wrapping in paper towels and microwaving on high for 1 minute for 4 of them. Or heat them on a tortilla griddle. Arrange the meat, vegetables, and cheese on each tortilla. Fold in edges and roll up.
