These are potato chips that are baked, not fried so will be softer than bagged potato chips and are not intended as a snack, but as a potato side dish to serve with steaks or chops. Choose a variety of potatoes for a taste comparison and experience! Use it as a family guessing game when serving by having 1 each of the varieties used on the table raw, and see who can guess which "chip" belongs with each potato. white potatoes Preheat oven to 400 degrees. Slice potatoes as thinly as possible, using a food processor or mandoline if desired. Arrange on a silpat or on parchment lined baking sheet with sides. Brush with olive oil and sprinkle with salt, lime juice and paprika. Bake about 10 minutes, or until done. Depends on potato, thickness, etc. Dollop with cream and serve.
