To the flour mixture, add about 1/3 cup snipped fresh sage leaves. Pat the dough out into a circle on a parchment lined baking sheet to about 1/2 inch thickness. With fingertips, make indentations on the top but not all the way through the dough. Spread with oil and sprinkle with more leaves and sea salt. With a sharp knife, cut them into wedges.
