Vegetables Ala Mode

From Dorothy McNett's recipes at No, not vegetables served with ice cream as we usually think ala mode means. A true meaning of the phrase is "in season" or "fashionable of the day". So, eat your local seasonal vegetables dolloped with a special sauce!

1/2 cup grated or finely chopped raw carrots
1/2 cup finely chopped celery
2 tablespoons chopped onion or shallot
1 - 2 tablespoons chopped parsley
2 - 3 tablespoons chopped bell pepper
1 egg, whisked well
1 tablespoon extra virgin olive oil
1/4 cup tomato juice or tomato pulp (mashed fresh tomato)
1 cup ground sunflower seeds
2 tablespoons wheat germ
1/2 teaspoon sea salt
1/4 teaspoon dried basil

bread or buns, as desired
honey mustard mayonnaise, or other spread or sauce as desired
lots of fresh local lettuce, ala mode

Preheat oven to 350 degrees. Brush a baking dish with olive oil and set aside. Use a food processor, or sharp knife, and chop all vegetables. Combine ingredients and shape into patties and arrange in the dish, or just spread it in the dish. Bake 15 minutes, or until lightly browned on top. If making patties, turn them over. Continue baking about 10-12 minutes more, or until nicely brown. Serve in buns with honey mustard mayonnaise and lettuce.
