Harvest Turkey Dressing

1/2 cup butter or olive oil
1 medium onion, quartered
1 tart apple, unpeeled but cored
1 "hard" pear, unpeeled but cored
2-3 ribs celery
2-6 cloves garlic
1/2 teaspoon freshly ground peppercorns
1/2 teaspoon Mild Zip, or cayenne if desired
4-5 cups dried bread cubes
1/2 cup chicken or turkey stock
1/2 cup chopped fresh sage, or 2 tablespoons dried sage

Using food processor with steel chopping blade in place, chop the onion, apple, pear, celery and garlic. Dump into a batter bowl, add butter and seasonings. Cover loosely. Microwave on high 5 minutes. Have bread cubes ready in a large mixing bowl, and then stir in the cooked mixture along with the broth and snipped sage. So not over mix, just blend. Allow to cool enough so that you can shape balls of the dressing (think snowballs). Tuck the dressing balls into the neck cavity first and then secure with a toothpick. Now stuff the main cavity, and close the end with the heel of bread to hold it in. Roast as desired.
