Cheese Ball with Clams

From Dorothy McNett's recipes at www.dorothymcnett.com. A great Holiday appetizer! Use colorful vegetable pieces to make a decorated presentation, such as a Christmas tree, or a Thanksgiving pumpkin, etc....

1 - 1 1/2 cups shredded Cheddar cheese (try Cotswald)
1 can minced clams, drained
2-3 diced Mustarda d fruta or about 1 teaspon minced orange peel and lemon peel
2 tablespoons mayonnaise
a few grindings of pepper, or hot pepper sauce as desired
paprika
1 whole clove and 1 bay leaf
wheat crackers

Grate cheese finely, using food processor or cheese grater. Drain the clams well, discarding the liquid. Combine cheese, clams, fruits, mayonnaise and pepper. Shape into a ball, adding enough extra cheese if needed so that it will stick together. Place on serving plate, sprinkle with paprika and then tuck the clove into the top and arrange the bay leaf off the side, so it resembles an apple. Or decorate for the season! Serve with the crackers.
