1 pound freshly ground turkey
Preheat oven to 350 degrees. Combine all ingredients for the loaf. Pile into a loaf pan, or several small loaf pans for individual ones. Bake 30-45 minutes. Or use a glass or ceramic baking dish and microwave on 75% power for 10-12 minutes, or until done. In meantime, prepare the sauce. In batter bowl combine the olive oil with the dried mushroom mix. Allow to stand about 10 minutes to rehydrate the mushrooms. Whisk in the flour and then the milk. Microwave on high 2 minutes. Whisk well. Microwave another 1-2 minutes, or until thickened. Add the sherry and salt. Correct seasonings, correct the consistency if needed and serve over slices of the turkey loaf.
