Vegetables on Picks with Salsa

From Dorothy McNett's recipes at www.dorothymcnett.com. Very easy, always more fun to eat vegetables on a stick than with a fork, it seems!

Little potatoes
Zucchini chunks
Jicama chunks
Cherry tomatoes
Brussel Sprouts
Little Beets
Basil flavored olive oil
Sea salt and freshly ground pepper
snipped fresh herbs, or dried
1 jar of good quality salsa, or your home-made
1 ear of fresh corn, cooked in microwave for 3 minutes and removed from the cob

To cook any of the vegetables, simply wash them and allowing the water to cling to them, place in glass or ceramic bowl. Cover with a glass or ceramic plate or waxed paper. (no plastic!) Cook in microwave using 5 minutes per pound of vegetables as your guide. Roll or drizzle with the olive oil and sprinkle with seasonings. Insert picks. Arrange in a dish. Stir the corn into the salsa and serve on the side for dipping.
