Spiced Nuts for the Holidays (every day is a holiday with these!)

3/4 cup raw sugar
1 teaspoon cinnamon
1/2 teaspoon sea salt
1/2 teaspoon nutmeg
1/4 teaspoon each ground cloves and allspice
4 tablespoons water
1 cup each walnut, pecan, and whole almonds (or any other combination making 3 cups nuts)

In glass or ceramic batter bowl, combine sugar, spices, salt, and water. Cook in microwave for 2 minutes. Stir. Cook 1 minute more, to dissolve the sugar and make a sticky syrup. Stir in the nuts. Return to microwave and cook 3 minutes. Stir. Cook another 2 minutes, stir, and then 2 minutes more, or until the nuts have caramelized and are not yet burning but they are starting to "brown" a bit. Spread hot nut mixture in a single layer on silicone lined or buttered baking sheet. Allow to cool before breaking into chunks.
