Fish Kebabs

From Dorothy McNett's recipes at www.dorothymcnett.com. Use firm white fish that will hold its shape when cut into cubes. A nice appetizer or a salad or sandwich side dish, or serve several for a main dish!

2-3 firm fish fillets
juice of a small lemon
2-3 tablespoons extra virgin olive oil
1/2 teaspoon fine sea salt
freshly ground peppercorns
cooked Gnocchi, as desired
roasted red or yellow bell peppers
fresh large prawns

Cut the fish fillets into cubes about 1 1/2 inches, or any size that will stay on a skewer. Marinate them in the lemon juice, oil, salt and pepper for at least 15 minutes. In the meantime, cook the gnocchi in boiling salted water until they float to the top. Drain. Arrange the fish chunks, the gnocchi, and the red pepper pieces on skewers, ending with a prawn. Broil or grill until the fish is done and the prawns have turned pink.
