Waffle Potatoes with Peanut Sauce

russet potatoes
2-3 tablespoons olive, macadamia nut or peanut oil

1/2 - 3/4 cup hot water
3/4 cup peanut butter
2 tablespoons soy sauce
1 pkg Indonesian Peanut Sauce Mix

Peel potatoes. Use a waffle weave slicer to cut the potatoes into waffle weaves. Heat oil in a large heavy bottomed fry pan until hot but not smoking. Add the potato slices in one layer and cook until browned, turning as necessary. Drain on paper lined baking sheet. In meantime, heat water 2 minutes in microwave oven, and then add peanut butter, soy sauce, and sauce mix to blend. Allow to rest about 3 minutes to absorb flavors. Use as a dipping sauce or drizzling sauce over the potatoes or French fries.
