Cashew Cream

From Dorothy McNett's recipes at as submitted by her daughter, Alison Anton at Use this as a great dessert or as a topping for Almond Torte.

1 cup cashews, soaked 1-2 hours
4-6 dates, soaked 1-2 hours, pitted
1/2 to 1 cup water
1/2 teaspoon real vanilla extract or vanilla paste

Drain cashews and dates. Place cashews, dates, vanilla and about 1/2 cup of water into food processor. Puree, adding water to get a nice, thick and creamy consistency.
