Spinach Cheese Strata
From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Make it as a 9 by 13 casserole, or make 4 smaller individual versions. You get to choose!
10-16 oz. fresh spinach
4-5 slices good quality bread, cut into cubes
2 tablespoons extra virgin olive oil
1/2 pound Emmenthal cheese, grated
2/3 cup whole milk, or half and half
1 tablespoon very finely minced onion
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground peppercorns
Wash and spin dry the spinach and place in glass or ceramic dish. Cover. Microwave on high for 2 minutes and set aside.
Cut the bread into cubes and toss with the oil in your choice of baking dish or dishes. Top with cheese, and then the cooked spinach. Whisk the eggs in a batter bowl, adding the half and half, onion, salt and pepper. Pour into the casserole. Sprinkle with paprika. Bake in 350 degree oven for about 30 minutes, or until mixture is set and lightly browned on the top.
