Macadamia Oil Croutons with Brie
From Dorothy McNett's Recipe Book at www.dorothymcnett.com. The Macadamia nut oil adds a new dimension to croutons....nutlike and also very healthful. This presentation would also be nice with sliced fresh strawberries in season, or pears in the fall. Enjoy!
1 loaf good quality French bread
Using a bread knife, cut the bread into 1 inch cubes or discs. In a heavy bottomed skillet, heat the macadamia nut oil with the salt. Toss in the bread cubes and cook and stir gently until they crispen and brown. (Can also be do in a 375 degree over for about 10 minutes) Set aside to cool. In meantime, wash and spin dry the lettuce leaves and arrange on a large platter or serving board. Place the brie wedge or wedges on the bed of lettuce. Arrange the bread cubes around the brie, and teach people how to scoop up the brie with a crouton.
