From Dorothy McNett's recipes at www.dorothymcnett.com. A basic recipe so that you can cook up these nutritious goodies for use anytime in any recipe, such as in a salad, in a soup, in a dip or just to eat with some fresh tomatoes and garlic and olive oil. There are so many varieties available now, experiment with colors. They all are high in proteins and other valuable nutrients. This will yield about 2 3/4 cups of cooked lentils. To your health!

1 cup dried lentils
4 cups water
1/2 teaspoon sea salt
freshly ground pepper
extr virgin olive oil
snipped green onions

Bring the water to a boil in a saucepan. Wash the lentils in a colander or sieve and then carefully add them to the boiling water along with the salt. Bring back to a boil, reduce to a simmer, and continue cooking about 20-30 minutes, or until lentils are tender. Drain them in a colander or sieve. Pour into a beautiful bowl, season with olive oil, snipped green onions, perhaps more salt, and freshly ground pepper.
