Lentils ala Microwave
From Dorothy McNett's recipes at www.dorothymcnett.com. Not a time saver as it takes the same amount of minutes, but it is so simple and successful. If you prefer the lentils to be very soft when done, do not cook with the salt but add it when done, as the salt tends to keep a firmer texture in the lentils during cooking. These are so good just like this, but can be added to salads, soups, stews, etc.
1 cup lentils, any color or a variety
Wash the lentils in a sieve or colander. Combine lentils with water, salt, herbs and oil in a 2 quart glass or ceramic batter bowl. Cover with a glass or ceramic lid (not plastic!). Microwave on high 5 minutes, then on half power (power level 5) 18-20 minutes. Lentils should be tender, but still "meaty" to the bite. Drain if necessary, and use as desired.
