Pork Tenderloin

From Dorothy McNett's recipes at www.dorothymcnett.com. Use a stove top smoker or Dutch oven or saute pan with lid Pork tenderloin cooked this way is wonderful with freshly made Apricot Salsa. (see recipe for Apricot Salsa)

1 pork tenderloin
1 - 2 tablespoons walnut oil, or other oil as desired oil
2 tablespoon soy sauce
1 tablespoon honey or raw sugar
1 tablespoon freshly grated ginger
1 tablespoon freshly grated garlic
pepper
green onions or chives, for garnish

Brush meat with the oil. Combine remaining ingredients and rub over the meat. If using the smoker, follow the Smoking Guide directions, using about 30 minutes cooking time. If using a Dutch oven or covered saute pan, heat a little oil in the pan and then when hot, add the prepared meat. Cover (leave the lid slightly ajar to allow some of the steam to escape) and allow to cook at medium heat about 20 - 30 minutes, or until meat is done. (150 - 155 degrees on meat thermometer) Garnish with green onions or chives and serve.
