Waffle Sliced Fresh Vegetables

1-2 zucchini
1-2 carrots
1-2 apples
1-2 parsnips

1-2 tablespoons extra virgin olive oil
sea salt
freshly ground peppercorns
a few drizzles of good balsamic vinegar

Using a waffle weave cutter or mandolin, slice the vegetables. Heat oil in heavy bottomed saute pan, adding vegetables and cook crisp tender, stirring often. Season and serve.
